Saturday lunch is easy! Brown rice with edamame, broccoli, green onions, avocado, and Thai chicken. The sauce is super simple: 1/4 cup rice vinegar, 1 Tbsp soy sauce, 1 Tbsp honey, 1 Tbsp ginger, 1 Tbsp sesame oil. For the chicken I used olive oil and Thai green curry seasoning from The Gourmet Collection (TJMaxx, HomeGoods, or Amazon). I cooked the chicken in my air fryer at 380 for 16 minutes. Top the dish with toasted sesame seeds. I cooked for 4 people at approx. $25 total.
